Ingredients :
- Oil or butter (1 teaspoon)
- 2 eggs
- Milk (1 tablespoon)
- Tomato, diced (2 tablespoons)
- Kalamata olives, sliced (2 tablespoons)
- 1 Artichoke heart, quartered
- Feta, crumbled (1 tablespoon)
- Red pepper sauce (1 tablespoon )
Directions :
- Heat the oil in a small skillet.
- Pour in the mixture of the egg, milk, oregano, salt, and pepper and cover the pan.
- Cook until the egg starts to set before sprinkling on the tomato, olive, artichoke, and feta per half of the egg.
- Now fold the egg in half.
- Cook the eggs until set, about a minute, before removing from the heat.
- Finally, top it with the romesco sauce.
