Baked Eggs with Tomatoes and Spinach

Did someone say baked? The word baked makes us think of healthy food (of course not when it comes to cakes). And add to it Spinach and Tomatoes and you get a killer concoction of health and taste. Spinach is rich in Iron and antioxidants, and the tomatoes are great source of Vitamin C, Potassium, Folate and Vitamin K.

  • Spinach – 100 g
  • Tomatoes – 400 g
  • Chilli Flakes – 1 tsp
  • Eggs – 4


Preparing the spices


1. Chop finely the tomatoes
2. Pre-heat oven to 200 degree Celsius.



1. Soak the spinach leaves in a bowl of hot water for 5 minutes
2. Squeeze out the excess water
3. Line an over pan with the leaves
4. Mix well the chopped tomatoes and chilli flakes in a bowl. If need add extra seasoning.
5. Add this mixture to the pan
6. Make 4 wells in the mixture using a wooden spoon
7. Break an egg into each of the wells
8. Bake this for 12-15 minutes until the eggs are cooked

Serving Suggestion


Have with toast and a steaming cup of coffee
