Baked Eggs with Sausage

Ingredients

  • Pepper – 1
  • Medium Potatoes – 2
  • Medium Zucchini – 1
  • Yellow Onion – 1/2
  • Breakfast Sausage – 1 pound (0.4 Kg)
  • Brown Eggs – 6
  • Extra Virgin Olive Oil – 2tbsp
  • Minced Garlic – 1 tbsp
  • Basil – 1 tbsp
  • Parsley – 1 tbsp

Method

Preparing the spices

1. Preheat oven to 350 degrees.
2. Cut vegetables in medium pieces.

Cooking

1. In a medium saucepan, add 1-2 tbsp of Extra Virgin Olive Oil and heat it

2.Add the garlic. Once it starts giving the aroma, add the potatoes and onion.

3. Sauté this for 5 minutes

4. Add in the zucchini and sauté for few minutes

5. Add the salt and pepper according to your taste

6. Remove from heat add and then add chunks of sausage

7. Keep the pan in the preheated oven and bake for 15 minutes

8. Remove the saucepan from the oven, and crack open the eggs on top

9. Put the pan back into the oven and bake for additional 25 minutes until the eggs are perfectly cooked.
